I live in Wisconsin, and we like our meat here. Besides cheese, one of the things we are known for are brats (bratwurst for those not familiar). We eat these at sporting events, picnics, and even local McDonald’s carry them during certain seasons. We like to top them with sauerkraut, bathe them in beer, and know that you never top it with ketchup. The close cousin to the brat is ring sausage, I like to use Hillshire brand since they are made locally, but you can use whatever you prefer. I found a way to take that lonely ring of meat and make it into a meal for the family, and sneak in some veggies.
1 Pkg smoked sausage ring, cut diagonally cut into 1/4 inch pieces
2-3 Tbsp olive oil
2-3 cloves of garlic, crushed
1 tsp Oregano (optional)
1 tsp basil (optional)
1 large red bell pepper, sliced thin
1 small onion, sliced thin
1 pkg frozen broccoli, I microwave it about 3-4 minutes to thaw but not cook all the way
1/2 cup chicken broth (or water)
1/2 cup tomato sauce
1/2 cup shredded mozzarella cheese
- Heat olive oil and garlic in a large skillet, stir in sausage slices and cook until sausage is browned.
- Add pepper, onion, broccoli, chicken broth, tomato sauce and optional spices and simmer about 10 minutes until the vegetables are tender and most of the liquid is absorbed.
- Top with shredded cheese and serve. You can also serve this over rice or noodles if you wish.
Sometimes I will add some crushed red pepper to step it up a notch, or just leave it plain. You can play with the spices to make it your own.
